From China's Enoki to Japan's Maitake to Europe Saffron Milk cap mushrooms, 2,000 edible varieties of mushroom are grown and eaten around the world. With Umami flavour, mushrooms are nutrient-rich, a key source of protein and grow where other foods would not. Choosing to cook and promote lesser known Ingredients can improve nutrient intake and build resilience in our food systems.
I decided to cook these gorgeous portobello mushrooms from @krishicress in a little butter and garlic, and a slight dash of oyster and soy sauce. It definitely brings out the meaty-umami flavour.

Morning khari baking 😍👩🍳
Khari biscuits or commonly known as fan or puffs are available at Irani Bakeries and even your small chai tapris. They are crispy, flaky, fluffy, salty and mouth-melting. Several layers of dough are kept on each other with a layer of butter or ghee and it's folded and repeated rolled. Then it's baked at a high temperature to get that natural golden glaze.
P.S. These can be used in many ways, we make a special Mushroom on Khari @sbowindia you can even have them with chai. Happy dip dipping ☕
